Cherry Salad with Pomegranates
I am not the jello fruit salad kind of girl, but after trying this dish to show my respect to the cook, it has been one of my favorites. This year I topped it with pomegranate arils which made a perfect garnish and an added crunch.
This recipe is also the dish you have to make ahead of time, so make it the night before and it will be perfect for the next day!
Cherry Salad
Ingredients:
2 (3 oz) packages of cherry Jello
1 (20 oz) can crushed pineapple
1 3/4 cup boiling water
1 can cherry pie filling
1/2 cup sugar
1 TBSP sour cream
8 oz. cream cheese, softened/
1/2 tsp. vanilla
Directions: Mix Jello and boiling water. Add pineapple, undrained, and pie filling. Pour into a 8 X 12 inch pan or dish. ( I used a 9 X 13 and it was a nice size dish). Refrigerate and congeal until firm. Mix sugar, sour cream, cream cheese, and vanilla. Spread on top of salad and garnish with pomegranate arils.
