Pomegranate Salsa
Have you ever opened up a pomegranate? Well, I hadn’t until now and I was a little intimidated. Thankfully Pom Wonderful has a Video on how to “score” a pomegranate but I was a little nervous at first.
It wasn’t difficult once I went through the process the first time. You just cut off the top, slice it sort of like an apple and then separate the pomegranate “arils” from the skin in cold water. The arils will sink to the bottom and the skin will float.
Tip: Don’t wear a white shirt while scoring the pomegranate or wear an apron. I ended up getting it all over my top so hopefully a little bleach and shout will get it out.
A few tidbits I learned today:
- Pomegranates can last up to one month on the counter or two months in the refrigerator as long as they aren’t opened.
- The arils can remain in a sealed plastic container in the refrigerator for 2 weeks. (We ate the whole pomegranate in one afternoon, so I guess they will last 2 weeks if you don’t partake.)
- You can freeze arils for many months in freezer bags, which makes them perfect for recipes through the year.
- Pomegranates are in season from October to January.
My first Pomegranate Recipe: POM Salsa
Ingredients
- juice from 1 large POM Wonderful Pomegranate or 1 cup POM Wonderful 100% Pomegranate Juice
- 2 cups arils from 2-3 large POM Wonderful Pomegranates
- 3-4 teaspoons chopped jalapeno pepper
- 1 cup finely chopped yellow bell pepper
- 4 tablespoons chopped cilantro
- 1 tablespoon granulated sugar
- 1 tablespoon rice vinegar
Directions: Thoroughly mix to combine all ingredients. Serve with tortilla chips. Salsa will keep covered in the refrigerator for 2 to 3 days.

Once I got over the nervousness of opening and pomegranate, this recipe was really easy to make and a huge success. I loved it from the start and so did my guests. It isn’t your typical tomato salsa, but more of a sweet salsa. It took a few bites for my husband to acquire the taste for it since he is a daily tomato salsa eater, but then he couldn’t stop eating it. In fact, he topped the rest of it of off.
I really like the Pomegranate Salsa since it is very unique and festive. It makes a perfect appetizer for parties and holiday gatherings. I will definitely be making it again since it was easy to do and fancier than what I usually make.

Thanks to a friend, I recently tried my first pomegranate (although she scored it for me). It was delicious!
