Pomegranate Zucchini, Mushrooms and Onions with Toasted Bread Crumbs

While viewing all the yummy looking recipes at POM Wonderful, the Zucchini and mushroom recipe caught my eye since we normally eat these veggies.

Pomegranate Zucchini, Mushrooms and Onions with Toasted Bread Crumbspomzuchini

Ingredients:

  • juice from 1 large POM Wonderful Pomegranate or 2 tablespoons POM Wonderful Pomegranate Juice
  • ¼ cup arils from 1 large POM Wonderful Pomegranate
  • 1-2 tablespoons olive oil
  • 1 cup onion slices
  • 2 cups zucchini slices
  • 1 cup sliced fresh mushrooms
  • salt and pepper to taste
  • 2 tablespoons sherry or Marsala
  • 3 tablespoons fresh bread crumbs
  • 1 tablespoon Parmesan cheese
Directions:
  • Heat oil in a large frying pan.
  • Add onions and cook over high heat until slightly brown and softened.
  • Add zucchini and mushrooms. Stir and cook quickly.
  • Add salt and pepper to taste.
  • Remove vegetables from the pan; set aside and keep warm.
  • Add sherry or Marsala and pomegranate juice to deglaze pan.
  • Return vegetables to the pan.
  • Toast bread crumbs on a baking sheet at 425F until brown and mix with cheese.
  • Toss bread crumbs with vegetables and add arils. Serve hot.

I have to admit that this recipe called for a few more steps than I initially thought it was going to take.  I hadn’t cooked with sherry before nor “deglazed” a pan, so that was new to me.  Also, I wasn’t crazy about toasting the bread crumbs before adding them to the veggie mix.  Having two kids wanting to be held around dinnertime, I enjoy recipes that are simple and fast.

How did the recipe turn out? I really did like the vegetables, but I would not use as much breadcrumbs next time.  I like the sherry taste and it reminded me a little of the chicken Marsala flavor.  My husband didn’t care for it at all, but then again he doesn’t like Chicken Marsala. He might would have enjoyed it had it not called for sherry.  I for one will be saving the leftovers for tomorrow since I like the variety and flavors, but since he didn’t enjoy it I probably won’t be cooking it again soon.
