The Easiest Pumpkin Muffins for Thanksgiving

pumpkinmuffins2I wanted to share this easy recipe for Pumpkin Muffins that a friend gave me last year.  I made them a few weeks ago and my family loved them, so I will be making them again to enjoy Thanksgiving morning.

These muffins are so easy that you can make them on Thanksgiving morning to give your house that wonderful aroma, or even the day ahead.  They are low in calories and fat, so you can save reserve the calories for the big Thanksgiving meal.

This recipe has 2 ingredients:  a box of spice (or carrot) cake mix and a can of pure pumpkin. No eggs, no oil, and no water!

Easiest Pumpkin Muffins

Ingredients:
One box of spice or carrot cake mix
One 15-oz. can pure pumpkin

Directions:
Mix the two ingredients together in a bowl.  (Do not add oil, eggs, or water that is called for on the cake mix box).  The mixture will be very thick.
(I admit it, I was tempted by the batter being so thick so I added 1/4 cup of water to the batter and my muffins still turned out great.   But all recipes on the web that are similar to this warn not to add water, so try not to give in.)

Spoon into lightly greased muffin tins or paper lined muffin cups 2/3 full.  The batter is very thick and you may want to smooth the tops.  Bake at 350* 18-22 minutes or until a toothpick comes out clean.

For variety, you could also add raisins, nuts, or chopped apples to the batter.

Side-note: Some people use this recipe to make pumpkin cookies and the batter is mixed the same way.  Drop the mixture by spoonfuls on a greased cookie sheet and bake for 8-15 minutes depending on the size of the cookies.

    We use a yellow cake mix, pumpkin and cinnamon chips! YUMMY!

    I need to try the yellow cake mix. I heard that a chocolate cake mix is really good too and it doesn’t taste like pumpkin.

    I made these the night before Thanksgiving and they were gone in about 20 minutes, so we didn’t have them for breakfast. This time I didn’t use water, but I did use an electric mixer and it worked much better. They are so moist!
